Chicken Pot Pie Recipe

My easy chicken pot pie recipe is cooked in a saucepan till the sauce thickens, then poured into a casserole dish and topped with puff pastry.

Gen's Easy Chicken Pot Pie Recipe

This recipe makes 6 - 8 servings.

Serve this meal with short pasta or mashed potato.


Firstly make the chicken filling for the pot pie. Look how healthy this is - full of fat free chicken meat and freshly cooked vegetables and just about no oil at all in this meal. Tip it all into a shallow oven proof bowl, such as a casserole dish.

Top with a sheet of pastry like a lid and decorate with bits of excess cut off pastry. Bake till golden brown just like this.

Gen's Easy Chicken Pot Pie Recipe


You'll need:


•    1 onion, diced
•    1 pound/500gm chicken thigh meat, cut chunkily
•    2 sticks celery, diced
•    2 carrots diced
•    1 tbsp plain flour
•    2 tsp honey
•    2 chicken stock cubes (low sodium)
•    salt and pepper to taste
•    1 cup water
•    2 cups frozen peas

Put it together:

•    Preheat oven to 400F/200C


•    Into a hot non-stick pan, cook the onions for a few minutes then


•    Add in the chicken pieces and cook till the onion is soft and the meat is lightly browned


•    Toss in diced celery and carrots and cook for a further 5 minutes


•    Add low sodium stock cubes, salt, pepper, honey and flour. Combine well and cook for a couple of minutes


•    Pour in water and stir combining all the ingredients. Turn down the heat to a slow simmer for 10 minutes until the sauce thickens


•    Take the saucepan off the heat. Pour into the casserole dish.


•    Stir in frozen peas
   
Now, Prepare the Pastry Top

•    1 sheet store bought puff pastry


•    1 egg, beaten for egg wash


•     Using the lid of the casserole as a template, cut out a large circle, slightly larger than the diameter of the casserole dish


•    Put the circle of pastry onto the top of the casserole dish filled with the chicken filling. Firmly press down the edges of the dough


•    Cut holes in the top to allow circulation of hot air. Decorate with pieces of cut-offs


•    Apply egg wash over the top
      
•    Bake for 30 minutes till golden brown

Tips From Easy Recipes

If you consider a sheet of pastry contains too much fat for your daily dietary intake, substitute with a topping of mashed potato topped lightly with shredded cheese.

Here's how I cut the dough to fit the top.  Upturn the empty casserole dish onto the dough and cut with a wide margin just like in the photo.

Take out one sheet of frozen rolled out dough an hour before you need to use it. Put the rest back into the freezer, or do a big bake to use up all the puff pastry sheets.  You can't re-freeze thawed dough.

Use a shallow casserole or Pyrex dish so that the pie filling generously fills the casserole dish.

Allow the pie to cool for 10 minutes as it is very hot straight from the oven.
