Easy Fudge/No-Flour Brownies

This recipe is a very rich moist fudge with a "cake feel".

Cut into small squares to serve. It makes about 20 squares.

You'll need:

• 6 oz/175 gm butter

• 2/3 pound/300 gm good quality dark chocolate

• 1 cup brown sugar

• 1/4 cup cocoa powder

• 5 eggs, beaten

• 1 cup/4 oz/ 100 gm almond meal

• Preheat the oven to 360F/180C

• Melt together in a saucepan over moderate heat, butter, chocolate and brown sugar. Take it off the heat immediately as soon as the solids melt, taking care not to overheat the chocolate. Keep on stirring to get a thick mixture that is well combined

• Add in beaten eggs and cocoa powder. The mixture should now look smooth and thick

• Fold in almond meal. Fold in just as you would with flour

• Pour the batter into a non stick baking pan. If you don't have one, be sure to line and grease it.

• Bake for 40 minutes

While it is a gluten free recipe as it has no flour, it is, nonetheless NOT healthy!  This fudge brownie is far too rich in butter, sugar and chocolate to be anywhere near healthy. However, it is delightfully and lusciously delicious!

It is very rich, so smaller squares may be better for the sake of your hips.

This variation of easy fudge recipes is different as it has a "cake" feel to it and it really is a delicious and "more-ish" fudge.

It is very buttery, chocolatey, rich and yummy. Don't bother thinking about the calories - just enjoy!

The ingredients for fudge are everyday ingredients likely to be found in any pantry.





1. Melt together butter, chocolate and sugar in a saucepan.




2. Add the beaten eggs.  See how the mixture looks thick and smooth.





3. Fold in the almond meal in the usual way.




4. Pour the batter into non-stick bake ware. Bake in a moderate oven for 40 minutes.





5. Here it is - baked!  Use a square pan if you have one.




Tips For Easy Fudge Recipes


  • I only ever use non-stick bake ware so as to avoid the process of greasing and lining pans. Furthermore, greasing does mean consuming additional fat which we should do our best to minimize.

  • I only ever use eating chocolate in my baking and not cooking chocolate. The result is a much richer, fuller flavored brownie or fudge.
