On this page, I'll share with you this super quick and easy pasta with sun dried tomato, olives and rocket.

Easy Pasta with sun dried tomatoes, olives and rocket

This recipe serves 4 persons.

Just Add Prepare
• freshly cooked short pasta, enough for 4 persons

• 1 jar/8 oz/250 gm dried tomatoes, cut roughly

• 1 cup of sliced black olives

• 4 cups of rocket leaves

• 2 cups shredded parmesan

• 1 tspn piri-piri


• After draining the pasta, put the pasta back in the pan, on moderate to low heat

• Toss in the whole jar of (cut up) sun dried tomatoes including the oil

• Toss in olives, seasoning and rocket

• Warm through and combine well

• Take it off the heat and toss in Parmesan cheese. Garnish with more rocket leaves

This is an elegant meal, very easy to cook and ready within 15 minutes.

The children love this dish.

Tip

Use pretty short pasta for this dish like bows or spirals.
