Ground Beef Salad With Simple Boiled Potatoes

For this quick salad with freshly cooked ground beef, you'll need:

  • 4 potatoes diced into eights
  • 1 pound/ 500 gm extra lean ground beef
  • 1 tb garlic granules
  • 1 tb dried oregano
  • 1/2 tb piri-piri
  • 1 tb sugar
  • 1 stock cube
  • salt pepper
  • 1 can/15 oz/425gm tomatoes
  • 1 can/15 oz/425gm corn kernels, drained
  • 1 can/15 oz/425gm any beans, drained. I used garbanzo beans/chick peas as it was in the pantry
  • a handfull of almonds
  • juice from 1 lime
  • 3 spring onions diced

First things first - put on the boil the potatoes as this will take 20 minutes to cook. Cook in lightly salted water

Now, let's make the salad.

In a hot pan, fry together the ground beef with all the seasonings. This will take about 10 to 15 minutes.

Turn the heat to medium and pour in the drained contents of the cans.

Squeeze over juice from one lime

Toss together to combine and serve the salad on a dinner platter.

By this time the potatoes will be cooked. Arrange them around the ground beef dish and sprinkle over with chopped spring onions.

  • Only ever purchase the best quality leanest ground beef. If you don't you'll waste so much time de-fating and disposing of the liquidized fat.  Besides, I can't bear the smell of fat in the kitchen
  • To save time use dried garlic granules. Purchase a large jar so you never run out of garlic. Garlic adds depth of flavor to your meal
  • Now, I used garbanzo beans (also known as chick peas) as that's what was in my larder but the salad goes just as well with any other beans. I would prefer though to use a light colored bean like white beans or canneloni beans for the color contrast
  • When adding the canned ingredients, the idea is to warm them through, not cook - so this step takes very little time but requires a good stir through
  • When you serve tasty hero dishes, the sides need to be a simple contrast to allow the taste buds to rest. That's why simple boiled potatoes goes well with this dish. You wouldn't for example have sides of cheesy cauliflower or sweet potatoes. Those flavors would be too rich to go with this salad.
