My homemade pasta recipes include this meat sauce cannelloni. The trick to this dish is to make the meat sauce finer and smoother than your usual Spaghetti Bolognaise sauce.

While this meal is easy to prepare, it is not quick as filling the tubes of pasta is time consuming.

It is worth the effort though, as this recipe is delicious and the family just love this hearty and tasty pasta meal.

Cannelloni is pasta formed into the shape of tubes. It is not the cheapest pasta as you can imagine, the cost of freight would be expensive. For the same quantity of pasta, the tubes take additional packaging for the increased volume it takes up. Additionally, the packaging needs to be stronger and firmer to prevent damage to the pasta tubes in transit.

Homemade pasta recipes go fantastically with sides of a freshly made salad and crunchy bread. Enjoy some red wine with your meal, too.

This recipe fills 12 tubes of cannelloni and serves 4 persons.

Fry onions and brown the meat

Add the seasonings, flour and tomato puree. Fry together for a few minutes. Stir well so that it is a smooth fine mixture

Make the bechamel/white sauce. Pour a layer into the base of your oven proof dish

Pour over the white sauce taking care to cover all the pasta
Sprinkle with some shredded Parmesan cheese

Cannelloni With Meat Sauce

Just Add Prepare Meat Filling
• 12 tubes of cannelloni

• 1/2 onion, diced finely

• 8 oz/250gm premium grade ground beef

• 2 heaped ts plain flour

• 1 heaped tbs tomato puree

• 1 ts stock powder

• salt and pepper to taste

• 1/4 cup white wine or water


• Preheat oven to 350F/180C

• In a non stick pot on high heat, fry diced onions till soft. Otherwise, you will need to add some oil firstly.

• Brown the meat

• Add flour, seasonings, tomato puree and combine. Cook on high for a couple of minutes for the mixture to become thick

• Pour in wine or water. Bring to a boil, then reduce heat to simmer. Leave it to simmer for 10 minutes till the meat is cooked. The meat sauce should be smooth and fine and not too liquidy.

Just Add Prepare White/ Bechamel Sauce
• 1 1/2 oz /50 gm butter

• 1/2 cup plain flour

• 4 cups milk

• salt and pepper to taste


• Melt butter in a saucepan

• Add flour. Combine. The mixture will look like small clumps of dough

• Pour milk in, all at once

• Keep stirring till there are no lumps of flour and it becomes a thick sauce. Do not allow the milk mixture to boil

• When the sauce it ready, spoon some sauce into the bottom of the oven proof dish. I use a small oven proof dish

• Reserve the rest to pour over the filled tubes of cannelloni

Just Add Assemble Cannelloni
• 1/2 cup shredded Parmesan Cheese


• Fill the tubes of pasta/cannelloni with the meat sauce using a small teaspoon. Use the tip of the handle to help push the filling in. Alternatively use a piping bag, if you have one

• Lay the filled tubes of cannelloni on the white sauce on the base of your oven proof dish

• When all the cannelloni are filled, and arranged neatly in the oven proof dish, pour over the white sauce. Be sure to cover all the pasta

• Sprinkle shredded Parmesan cheese over the top

• Bake for 30 minutes till golden brown
