Let's Put It All Together!



For this last easy part of the recipe, you'll require:

  • Equipment: A lovely salad bowl
  • The roasted seasoned pumpkin
  • The cooked quinoa seeds
  • A block of Parmesan Cheese for Shaving
  • A large bunch of flat leaved parsley


Firstly toss the cooked quinoa and roasted pumpkin pieces into the bowl.





Before we chop up the parsley, remove the leaves with soft stems from the main stalk, just like in the photo. Just cut away the stalk at a point where the leaf stems start.







Keeping the parsley in a compact bundle, use a sharp heavy knife to slice across them in 1/4 inch widths. Chop them all up to a regular size.





Toss the fragrant freshly chopped parsley into the serving bowl.

Cheat's Recipes Tip

The cheat's way of roasting pumpkin is to NOT trim off the skin. Many cooks, use the short cut in their recipes, of just making big slices and placing them as is on the baking tray. But do spray oil over them so that they're not too dry on roasting.

Then scoop out the roasted flesh and discard the skin.
