A Most Attractive Tomatoe Salad

This wonderful colorful Tomatoe Salad is incredibly simple to whip up. Enjoy the contrast in colors of the bright red tomatoes accented by blinding white crisp feta cheese and highlighted by roughly torn fresh basil leaves, selected for its fragrance and flavor.

Tomatoe Salad

Here's how to make this delicious and attractive salad with Tomatoe.

For a large sides for 10 serves, you'll need:

  • 4 large vine ripened tomatoes, sliced into rounds
  • 2 small pickled onions diced into tiny pieces
  • 2 heaped tbs feta cheese crumbled
  • 5 basil leaves, torn roughly
  • 1/4 cup olive oil
  • 1/8 cup red wine vinegar
  • salt and pepper


Arrange the round slices of tomatoe in a flat salad serving plate.

Sprinkle over the tiny pieces of cocktail onions and crumble over feta cheese.

You can make this ahead of serving. If so, at this stage, cover with cling wrap and put it aside in the refrigerator till ready to serve.

When about to serve, top with freshly torn basil leaves and pour over the dressing.

To make the dressing,

shake the olive oil and red wine vinegar with the seasoning in a small jar and shake till combined.

Secret No 1 - The Oils

The key to a good salad dressing is to use 2 portions of oil to 1 of lemon juice or vinegar.  I've tried in my efforts to be healthier to reduce the proportion of oils, but have found the flavor is too sharp and it just doesn't stick to the salad leaves.

As a result, I choose to use the best quality olive oils in salad dressings.

Don't be tempted to save time by pouring on the dressing too early and letting the tomatoes marinade. All that happens is the tomatoe gets all soggy as the cells disintegrate when left too long exposed to the vinegar.

Secret No 2 - The Produce

You'll find the taste of a vine ripened tomatoe to be far superior to coolant ripened vegetables and fruit as is the norm in supermarket supplied fruit.  The best are heritage tomatoes if you're able to source these.

The key to successful easy recipes is to use fresh, quality ingredients and to cook with the minimum of fuss. Taste the natural freshness and flavor of quality produce.

Secret No 3 - The Knife

Now, you do  know that the key to a beautiful tomatoe salad is to slice them cleanly and quickly. To achieve this, you must have a sharp knife. In fact, there's nothing more dangerous than a blunt knife.

I can't stress sufficiently the importance of investing in a good quality heavy sharp all purpose knife.
