A Healthy Fritata

You'll need:

  • 1 lb/500gm turkey mince
  • 2 onions, diced 
  • 5 potatoes, diced
  • 2 cups frozen peas
  • 6 eggs, beaten
  • water
  • 2 tbs self raising flour
  • 2 stock cubes
  • 2 ts sugar

Here's how to put the fritata together:

I use a non-stick electric frypan as it's large and roomy and being non-stick, there's no need to use cooking oil.  Every little bit of fat we don't consume means slimmer hips!

Toss in the onion, turkey and potato and fry till the meat is cooked.  There'll be enough natural fat from the turkey to glaze the potatoes, so don't be tempted to add any oil or butter.

Add the stock powder and sugar and combine well into the turkey mixture.

To cook the diced pieces of potato, add 1 cup of water and cover the pan with its lid. Add a little more water if necessary so that the potato is soft but holds its shape - you don't want it mushy.

In a separate bowl, beat the eggs, add 1/2 cup water and the flour and beat together well.

Pour over the cooked mince and potato.


Turn the heat down to medium low, leave the lid on  and allow the egg mixture to cook and set.  This will take about 35 minutes.

Enjoy this turkey fritata with short pasta and simple greens.

This is one of our easy healthy recipes with no added fat and additionally, we've used low fat mince. We don't usually use cooking oil in our meals as we all consume enough fats as it is in other foods.  While we eat everything, we always purchase only low fat graded mince to keep our waistlines intact and bellies slim.
