Vol au Vents

Here's the most elegant of quick and easy appetizer recipes.

The classy salmon vol-au-vents are ideal as appetizers served before a formal dinner party as well as for your cocktail or drinks parties. They're a small morsel, easy to manage with one hand, delicious, look classy, and are certain to whet the appetite.

They're so easy to make, that our kids help out by filling several vol-au-vent cases a few hours before the guests arrive.

This appetizer is not suitable for freezing.

The Elegant Salmon Vol-Au-Vents

This recipe makes 20 lovely little servings of vol-au-vents.

  • Vol-au-vents are little pastry "cups". These can be purchased from the supermarket, pre-baked. If this is a pre-dinner appetizer, make 3 different types of appetizers and allow 3 vol-au-vents for each guest.
  • 1 tub of cream cheese - the most popular brand is Philadelphia cheese. Stir up the cream cheese in its container to soften it a little. Pop the cream cheese into each vol-au-vent. Fill it to about 3/4 of the case.
  • 1 small packet of smoked salmon. This is about 100gms. Slice the salmon into pieces 1/2" by 2". Roll these into a cone shape. Pop each salmon cone into the cream cheese filled vol-au-vents.
  • Arrange them attractively on a platter.

These are elegant little morsels and your guests will love them.
