This ancient crop has been a primary staple food of pre-Columbian Andean civilizations and was as important as the potato and maize. It was such an important crop the first sowing of the season was done by the Inca King with gold ceremonial instruments.

This crop continues to be grown in the Andes around Peru, Bolivia and Ecuador and is expensive primarily because it cannot be harvested mechanically. The seeds mature at different times on each plant and must be hand picked for harvesting.

This crop is grown in high altitudes in the Andes and commercialization must be difficult for access of machinery on terrain that is not flat, let alone the difficulties with harvesting and the costs of freight. We've now re-discovered quinoa and it's now appreciated for its nutritional value, with its high protein content of 14% of mass, much higher than popular cereals. Nutritional evaluations of quinoa indicate that it is a source of complete protein, is a good source of dietary fiber and phosphorus and is high in magnesium and iron. Additionally, as a source of calcium, it is ideal for vegans and those who are lactose intolerant. Quinoa is a seed, not a cereal and being gluten-free is easier to digest.
