Tips from Easy Recipes

  • DO NOT overcook the chocolate.  The heat is to help with the melt, not to cook

  • When making any dessert recipe, take care for a smooth chocolatey texture and not a grainy one. You have to be ever so careful if you're heating chocolate directly over the flame or hot plate as it can be quickly over cooked and ruined. If you find the melted chocolate becoming granular, that's when it has become overcooked. It can't become smooth after this stage.

That's why most recipe books recommend chocolate to be melted in a smaller pot heated by steam or boiling water. There are even special double pots for this purpose. These gentle procedures make it more likely to produce a delicious smooth texture.

Now, our site is about minimalism whether it's equipment or the cooking.

As a result, we telll you how not to overcook chocolate, but you must take care, use slow/ low heat, watch the melting process and remove from the stove as soon as the process is about over. Keep stirring to even out the melting process.
  • This makes a rich dark chocolate pudding

  • If you like your puddings lighter in texture, use self raising flour together with 1 teaspoon of bicarbonate of soda

  • If you prefer your pudding dessert recipe runny, cook for only 10 to 12 mins

  • At 15 mins this dessert recipe is cooked through, in fact too well cooked. Any longer will result in a hard texture.
