Here is another of my easy crockpot recipes. For us busy moms, a crockpot is ideal as it's just tossing the meat and veg into the crockpot and the results are healthy, nutritious and delicious meals. It really is one pot cooking with the least time in preparation.

Easy Crockpot Recipes - Roast Beef and Veg

This is an economical meal using blade roast, an inexpensive cut of meat. This meal cost $8 for 4 of us.

The roast was cooked to perfection in the crockpot and unlike slow roasting in an oven, the meat was not dried out. I am told that meat loses about 25% of its volume when oven roasted as moisture is lost. This does not occur in a crockpot.

Roast Beef with Vegetables

This recipe serves 4 persons.

This crockpot cooked roast is ideal for freezing.

Just Add Prepare
• 2 lb/1 kg blade roast

• 2 carrots, diced large

• 4 potatoes, quartered

• 2 sticks celery, diced large

• 1/4 cup water

• salt, pepper, to taste


• Put roast and water in the crockpot and roast on high for 3 hours

• Then add vegetables and cook on high for 2 hours

You'll all enjoy this incredibly moist roast beef. The vegetables are still firm given the shorter time in the slow cooker.

Serve with bread.

Now, how easy was that! Putting this together took minutes and the washing up is minimal.

Tip

Vegetables take a much shorter time to cook than meat, so if you do want your vegies cooked in the same pot, time their inclusion into the crockpot for 1 1/2 to 2 hours and no more, prior to serving.
