Steps: 1

To make 4 generous serves you'll need:

• 500gm/ 2 - 3 Smoked Chicken Breasts, sliced finely

• 400gm/1 Tin Lentils, drained

• 1/2 Head Lettuce

• 1 Red Capsicum, sliced

• 8 Cherry Tomatoes, cut in half

• Wide Shallow Pasta Bowl

• Arrange vegetables on the outer edges of the wide shallow bowl

• Pour in drained lentils into the center section

• Arrange over the sliced chicken breasts

• Salt and freshly ground pepper to taste

This healthy meal is superbly delicious. My fussy 20 year old son, enjoyed this so much, he asked me for the recipe.

For a serving of carbohydrates, we had bread with Philadelphia cheese.

This is more than a side dish, it is sufficient to be a healthy main meal.

  • To drain the lentils, after opening the top of the can, gently hold it back in place and tip it to drain all the fluids. The loosely held lid/top will hold back the lentils
