French Beans With Honey Glazed Carrots

A Healthy Salad Recipe

You'll need:

  • 1 pound/500 gm french beans
  • 2  carrots
  • 2 tbs honey
  • 1 tbs herb infused olive oil
  • 1 can / 400gm/ 12 oz cannelini/white beans, drained

How to put this recipe together:

Prepare the carrots

Peel and wash the carrots and julienne them. This means cut them into strips. Cut the carrots to the same length as the beans.

Place the carrots in a large pot with about  a quarter cup of boiling water and 2 tbs honey.

Roll the carrots around so as to evenly coat with honey.

As soon as the carrots are just cooked and still has a crunch in the middle, remove them immediately from the pot.

They should have a nice honey glaze. Leave to cool and then decant into the large salad bowl.

Prepare the greens.

Top and tail the french beans, rinse and leave whole.

Blanch them by tossing the into a large pot of rapidly boiling salted water. Turn the heat off as soon as the veg starts to go dark green. It only takes just a few minutes. We don't want to cook them, just to soften them a little by blanching.

Drain away all the hot water and stop it cooking by filling the pot with lots of fresh cold running water. Keep refreshing the water till the greens are cold.

They should be just cooked but still snappy and fresh.

Drain in a colander.

Add the flavored olive oil and mix through with the glazed carrots and scatter over the drained white beans.

Serve immediately!
