Here is one of my easy Italian recipes. This Spinach Cannelloni is easy to make BUT it is not quick. The fiddly part is having to stuff the tubes of pasta. It's actually not difficult, but it is time consuming.

Nonetheless, we persevere, because this dish is dee-li-shus and we all love the tubes of pasta.

It looks divine served with a crunchy salad. This is a healthy, no fat, vegetarian meal made from low fat cream cheese, spinach and some Parmesan Cheese.

Absolutely yummy!

This recipe makes 12 tubes of cannelloni, sufficient for 4 to 6 persons.

Serve with french bread and fresh green salad.

When the spinach and lite cream cheese are combined, add in Parmesan cheese

The cream cheese, spinach and Parmesan cheese mixture is ready

Make the White Sauce/ Bechamel Sauce

Stuff the tubes of cannelloni with the filling using a teaspoon

Arrange the filled tubes of pasta on a bed of white sauce

Pour white sauce over the filled pasta tubes.
Top With Sprinkled Parmesan Cheese

Spinach Cannelloni

If you want to make double the quantity, that is, for 24 tubes of pasta, then double the quantities in this recipe.

Just Add Prepare Spinach Filling
• 12 tubes of cannelloni

• 1/2 onion, diced finely

• 8 oz/250gm lite cream cheese

• 4 oz/125gm / 3 cubes frozen spinach

• 1/2 cup shredded Parmesan Cheese

• salt and pepper to taste


• Preheat oven to 350F/180C

• Fry onion till soft

• Add light cream cheese and frozen spinach cubes. Break it up and combine well. Add seasoning

• Lastly, stir through Parmesan Cheese

Just Add Prepare White/ Bechamel Sauce
• 1 1/2 oz /50 gm butter

• 1/2 cup plain flour

• 4 cups milk

• salt and pepper to taste


• Melt butter in a saucepan

• Add flour. Combine. The mixture will look like small clumps of dough

• Pour milk in, all at once

• Keep stirring till there are no lumps of flour and it becomes a thick sauce. Do not allow the milk mixture to boil

• When the sauce it ready, spoon some sauce into the bottom of the oven proof dish. I use a rectangular oven proof dish

Just Add Assemble Cannelloni
• 1/2 cup shredded Parmesan Cheese


• Fill the tubes of pasta/cannelloni with the cream cheese and spinach filling using a small teaspoon. Use the tip of the handle to help push the filling in. Alternatively use a piping bag, if you have one

• Lay the filled tubes of cannelloni on the white sauce

• When all are filled, pour over the white sauce. Be sure to cover all the pasta

• Sprinkle shredded Parmesan cheese over the top

• Bake for 30 minutes till golden brown

This cannelloni is deliciously scrumptious and the sauce is yummy. It will form part of your repertoire of easy Italian recipes, although I will say, this is not a quick recipe.

Tip

Use an attractive rectangular oven proof dish so that the meal can be served directly from the oven onto the table.
