Healthy Salad Recipe

You'll need:

  • 2 ripe avocados, diced into 1/2 inch chunks

  • 1 can/ 400 gm/ 14 oz corn kernels, drained

  • 10 cherry tomatoes, halved

  • 4 spring onions or shallots diced

  • 1 lemon

  • 1 tb herbed olive oil

Here's how to put it together:

Using a lovely serving platter, place

  • the drained corn kernels
  • the halved cherry tomatoes
  • the sliced spring onions (notice how I've sliced them diagonally, just to be different)
  • the cut chunks of avocado

Squeeze lemon juice over the avocado pieces. This helps prevent them browning till served.

Drizzle over your favorite herbed olive oil.

Mix gently with salad servers.


It is so simple to create a healthy salad, when you have a recipe that uses commonly available ingredients available from the supermarket.  The key is the pairing of flavors and if it is to be served as sides, the salad must not be overly tasty, so as not to overshadow the hero dish.

Salad does not always have to be with salad leaves, nor does it have to be drenched in dressing.  Consider the use of broccoli florets, asparagus spears, french beans or fennel  as a substitute for lettuce.  Pair the crunchy texture of these quickly blanched vegetables which have subtle flavors with something stronger but soft in texture such as olives, beetroot or feta cheese.

The permutations are endless.

But, do make your salads with ingredients in season. Always use the best quality, freshest produce.
