Peggy's Baked Rice Pudding

To make this baked pudding for 6 to 8 serves, you'll need:

  • 1/4 cup rice grains
  • 1 can/400gm/14 oz condensed milk
  • 1 1/2 cups water
  • 1 1/2 cups milk
  • 1 tb grated nutmeg
  • If you have some, lemon peel
  • a knob of butter


First things first - turn the oven on to preheat at 300C/ 160F

Now, let's throw the ingredients together.

Into an ovenproof casserole bowl, put in all the ingredients except the nutmeg.

Give it a stir to mix together.

Sprinkle over with nutmeg

Pop into the center of this slow oven for 2 1/2 hours.

For a creamier texture, every half an hour stir with the back of a blunt knife.
