Here's our easy meatloaf recipe

Lowfat savory loaf! It is a budget meal with little fat providing the ground beef is of a premium grade, nonetheless, there is no added fat in this meal. It is tasty, wholesome, easily extended with vegetables and so very easy to make.

Moist Low Fat Meatloaf

This meatloaf looks divine all glazed and golden brown and is ideal not just for dinner, but as a tasty filling for sandwiches for lunch, or for a picnic or as a pot luck dish.

It looks gorgeous, tasty and "more-ish" and I like that it is one of the simple recipes where everything's combined in one pot and then it's straight into the oven to cook.

There are no fancy ingredients in this easy recipe. More than likely you'll have these in your pantry.

Ingredients for this Lowfat Meatloaf

  • 1 onion, diced finely
  • 1 carrot, diced small
  • 2 slices of stale bread
  • 2 tbs plain flour
  • 2 tbs sugar
  • 2 tbs soya sauce
  • 1 stock cube
  • 2 eggs, beaten
  • 1 pound/500 gm best grade ground beef
  • salt and pepper to taste
  • 4 hard boiled eggs
  • 1 cup brown sugar

Preheat the oven

  • Before starting, be sure to preheat the oven to 390F/200C. By the time the ingredients for this recipe are combined, the oven cavity will be heated evenly.


Dice vegetables into small pieces so that they blend well into the meatloaf and makes it easier to slice neatly.





Place all the ingredients except for the last two, the eggs and brown sugar into a roomy bowl, just like in the photo.




Combine well.






Spoon half the amount into a non-stick medium sized loaf pan.




Place the eggs. Top with the remainder of the meatloaf mixture.





Firmly press the meat mixture around the eggs. Top with brown sugar.


Bake:

Bake for 40 minutes till it is a nicely browned. The topping of sugar adds a glaze to the lowfat meatloaf.


Tips From Easy Recipes

  • We only ever consume the best quality meat. It is worth paying more to ensure the meat is lowfat and from premium cuts.

  • To save time and to omit the process of lining and greasing pans, invest in non-stick bake ware. This recipe requires the use of a non-stick medium sized loaf pan

  • Purchased bread crumbs may be substituted for crumbs made from day-old bread
