Luscious Rice Pudding With Coconut Milk

This recipe serves 6 - 8 persons.

Just Add Prepare
• 1 cup uncooked rice

• 1 knob butter

• 2 cans/14oz x 2/400gm x 2 light coconut milk

• 2 cups milk

• 2 cups water

• 4 heaped tbsp brown sugar

• Pop all ingredients in a sauce pan. Stir to combine

• On moderate low heat, leave the rice to cook for 1 1/2 hours

• Don't be tempted to stir. Just leave it to cook

• So that the rice does not boil over, leave the saucepan lid opened slightly

Serve the rice pudding warm. It should be creamy and milky. Add more milk if you choose.

This dessert has the wonderful fragrance and flavor of coconut. Your family is certain to enjoy this yummy dessert.

Now, how simple was that!


Light coconut milk is a healthier option as it contains less fat, however you will find, as I have that a full fat version does give a deeper, richer texture and flavor.

For a creamier result use short grain Arborio rice. Although I have found even with long grain rice, the result is a lovely pudding as long as it is cooked long enough to break down the rice fibers.
