Recipe Ingredients



  • Equipment: Non Stick Loaf "Tin"
  • Coconut - dessicated or finely shredded
  • Rice Bran Oil
  • Sugar
  • Eggs
  • Self Raising Flour


This easy bar recipe is a throw it all together type of recipe. Here, I show you what the mixture looks like but if you are experienced in cooking and you're familiar with the look and texture of cookie batter, please go ahead and mix it all together in one go.

Before you do anything else please preheat the oven to 360F/180C.

In a roomy bowl or large saucepan, combine the the sugar, coconut and oil.





Add in the beaten eggs.





Add flour and combine.





The mixture for this recipe will look smooth like this.





For experienced cooks, you are welcome to put all the ingredients in the pot and combine till the bar mixture looks smooth like in the picture above.

Pour the bar mixture into two non-stick loaf tins.





Leave it to bake for 10 minutes and not a minute more.



Baked! Remove from the baking "tin" and cool on a wire rack.





When cool slice it into bars. Here I've sliced it into diagonal bars.









Sensationally Easy And So "More-ish" Coconut Bar Recipe


This recipe makes two loaf tins which cuts into about 18 - 24 regular shaped bars. In these pictures, I've cut them diagonally, which produces fewer bars.

Just Add Prepare
• 1 1/2 cups dessicated coconut

• 1/4 cup rice bran oil

• 1/4 cup sugar

• 3 eggs, beaten

• 1/4 cup self raising flour


• Preheat the oven to 360F/180C

• For the experienced cook, combine all the ingredients together till smooth. Bake for 10 minutes and slice when cool



• If you're a beginner and concerned about what the mixture should look like, follow these few steps. Combine the sugar, coconut and oil

• Add in the beaten eggs. Combine

• Add in the flour. Combine

• Pour the mixture into two non-stick loaf "tins". The batter will be quite shallow in the "tins" as you're making bars and not a cake

• Bake for 10 minutes and not a minute longer and you'll see that it's a lovely golden brown

• Remove and cool on a wire rack

• Slice into bars of your choice. Each loaf will produce 8 - 12 rectangular bars. But as you see in the picture, I've decided to make them diagonal - you don't get as many this way



Store them in an air tight container in a cool location but not in the refrigerator.

Tips

I only ever bake with silicone or non-stick bake ware. If you're not using these, be sure to line your baking tins with parchment or baking paper and be sure to grease them thoroughly to prevent sticking.
