This is how I prepare this butter chicken recipe, which is a one pot meal combining chicken meat, diced thickly, a packet of butter chicken sauce, tomato paste, half an onion, and low fat cream cheese.
To extend this meal, I also add diced potato and at the end stir through frozen peas.
I've found this packet sauce from Aldi, the chain of German supermarkets has the best flavor, is suitably mild and economical.
This recipe serves 6 persons.
You'll need:
• 1 1/2 pound/750g chicken meat, cut chunkily
• 1/2 onion, diced
• 2 heaped tbs tomato paste
• 1 packet of butter chicken sauce
• 1/2 cup water
• 1/2 cup/ 4 oz/ 125gm light cream cheese
• Optional - 2 potatoes, diced small
• Optional - 1 1/2 cups frozen peas
Here's how to put this recipe together:
• Into a hot pan, brown the onions, then chicken meat
• When brown, add all the ingredients, except the cream cheese. Combine well and cook on high for a few minutes
• Turn the heat down to a low simmer and cook for 20 minutes. Add the cream cheese and stir through during the last 10 minutes. Take care not to boil it
• If you are adding potatoes, do so when all the ingredients are being added
• Lastly, just before serving, stir through the frozen peas. Cook on high very quickly so that the peas do not become soft
You will have a rich, red butter chicken sauce, which is delicious served with fluffy rice.

It looks divine served with fluffy white rice and a crunchy salad.
Use
a non-stick pan so as to avoid using oil in your cooking.
If you
don't have a non stick pan, add a tablespoon of oil to the pan and heat
it before adding the onions and meat to brown.
