Now, Let's Make It!
For this part of the recipe, you'll require:
- Equipment: A lovely serving bowl
- the cooked and diced sweet potato
- 10 grape tomatoes
- cooked quinoa, cooled and fluffed up
- 2 ts lemon juice
Slice the grape tomatoes lengthways and pop them into the bowl.
Add in the yams. Here they are in the photo, tossed in.
Add in the cooked quinoa. Fluff with a fork.
Season with lemon juice and combine lightly.
If you have some goat's cheese in the refrigerator, crumble over about a quarter of a cup. This adds a lovely subtle flavor and the white color gives a sharp contrast. This step is optional.
